Chicken Confetti

"This one dish recipe dates back to 1971, when I was all of 13, helping my mother make dinner...She got the recipe through a mail order recipe card club where you received a packet of recipes every 6 weeks or so...The original recipe was a victim of it's time with tons of meat, plenty of fat and lots of sodium! I've taken the original recipe and lightened it up a bit with less meat, tomato products that have no salt added and whole wheat pasta! Add a tossed green salad for a complete meal!"

  • Rinse chicken and pat dry; season with the 1 tsp salt and the 1/4 tsp pepper --.
  • In a Dutch oven, brown chicken in oil, then remove --.
  • Drain off all but 3 tbsp of the fat; add the onion and garlic, cooking until the onion is tender, stirring as it cooks --.
  • Stir in chicken and all remaining ingredients EXCEPT the pasta and parmesan --.
  • Cover dutch oven tightly and simmer 1 hour or until chicken is tender, stirring occasionally.
  • When time is up, skim off excess fat; serve over the pasta and sprinkle with the parmesan --.
  • Suggestion: Use egg noodles or fettucine instead of the angel hair.

  1. I have been looking for this recipe card, which i had also received in the early 70's. I made this for my husband when we were first married, (35 years ago). He loved it and recently has asked me to make it. Thanks for the update on ingredients. I am going to make it tonight.
     
  2. This was very good-- I was deciding between 4 or 5 stars, and chose 5 due to the great, fresh taste and low fat/sodium. I 1/2d the recipe with no issues, and also cooked it on high for 4 hours in the crock-pot. I didn't change the liquid content, and it turned out just fine. My husband shredded his chicken and ate it, with the sauce, in a tortilla with cheddar cheese-- quite yummy. Thanks for a tasty, healthy recipe!
     
  3. I too received this recipe on a sample card many years ago. My family loved this dish, but since they are grown and gone, I haven't fixed it in years. When my friend broke her wrist, I wanted something special to take to her house. My card had deteriated so I looked at RecipeZaar site and found it. Thanks so much for posting it.
     
  4. I have had this in my recipes on a card that was given out to get you to sign up for other recipe cards that come in the mail, like a book club. In 1971 I was 10 so talk about a clutter collector! I'm right there with you but I'm glad you posted it (maybe now I'll finally make it)! Thanks!
     
  5. This was simple to make and smelled wonderful while cooking. I followed the recipe exactly. It made much more sauce than we could eat, so I froze the leftovers and will use them in something else. We truly enjoyed this and will make again.
