  1. Heat oil in a large skillet.
  2. Dredge chicken in flour and brown in oil.
  3. Mix drained mushroom liquid, tomatoes, soy sauce, and garlic in a bowl.
  4. Add sauce and sliced onions to chicken in skillet.
  5. Lower heat and simmer covered for 30 to 45 min or until chicken juices run clear.
  6. Add mushrooms and olives.
  7. Cook until heated through.
  8. Serve over rice.
