Chicken Crispy Bake

"Can be eating this in 30 minutes. Perfect served with peas and corn or a salad. You could even add the peas and corn to the dish. We used a store brought allready rotisserie chicken"

ingredients

  • 2 12 cups cooked chicken, chopped
  • 3 sticks celery, sliced
  • 34 cup slivered almonds
  • 1 12 cups mayonnaise (light works here to)
  • 12 cup cream (just realised that I forgot this and it was still fantastic)
  • 1 small onion, chopped finely
  • 1 tablespoon lemon juice
  • 1 cup cheddar cheese, grated
  • 50 g potato chips, crushed

directions

  • Combine chicken, celery, almonds, mayonnaise, cream, onion and juice in a large bowl; spoon into shallow heatproof dish.
  • Sprinkle with combined cheese and chips.
  • Bake in moderate oven about 20 minutes or until browned and crisp (watch carefully as mine only took 15).

  1. I made this tonight with some adaptations. We don't care for raw(ish) onion and celery in dishes like this - so I opted to lightly saute them in a pan with butter, and then additionally added broth to cook a little longer from the chicken I had boiled. I doubled up on the recipe so I used the entire chicken I had cooked the previous day. (I have a large family of boys.) My husband doesn't like chips in recipes so we omitted that - and for the cheese I used a combo of colby-jack.
     
  2. I substituted sour cream for the cream and added cooked rice- about 2 cups. Although it was very good, I think I will cut down on the onion next time. It was very strong. I also think I will try walnuts or pecans in place of the almonds. Overall, this is really good and I will definitely make it again. Thanks for a great idea!
     
  3. I also left out the cream and next time would either add cooked rice, as someone else mentioned, or use less mayonnaise, as it was a bit too rich. Very tasty and extremely quick and easy!!
     
  4. My husband loved this! I used a roasted chicken from the store and it made prep super quick. He totally wants me to make this again, his only request is more cheese and chips on top (one of his favorite parts). Thanks for the awesome recipe.

I didn't have cooked chicken, so I used frozen chicken tenderloins and cooked them in the sauce for about 30 minutes at 400*; then I added the potato chip and cheese mixture, reduced the heat to 350* and let it cook another 15-20 minutes. I lived in new zealand for 8 years of my life, now england for the past 8 years. I go to boarding school on the east coast of england. I have friends from all over the world, my best friend is canadian and also lived in france, so her mum and her for that fact, are mean chefs, boy do i like going to her house. I recently found out I am intollerant to wheat so have found it difficult to give up such easy foods to find and now have to search harder. I also have 2 leaks in my heart, one on a valve going in and one on a valve going out. A top carteoligist from London told me as long as I don't get pregnant for a while (I should hope not, I'm only 15) or eat fatty foods, my heart would do allright. He said he didn't want to operate on me yet, beacause there is a operation coming in the next 10 years which is lazer, so he wants me to wait, but he said I was fit and healthy and had no need to worry, yet....... when i was younger i dreamed of being a choreographer or a marine biolagist, then i wanted to work for vouge magazine, then get married and move to barbados and raise a family where the only thing that passes anyones lips will be home grown or hand made, a bit ambitious i know, hehe. But now my dream is to be a laywer and help others that really need it, and hopefully move back to my roots and bring up a family there For lent i have given up refined sugars and it is so hard and i am only 3 days into it, i was starving at school, opened my tuk box only to find marshmallows and smarties and a box of cereal, i think cereal is about to become my best friend over the next 6 weeks. LOL EDITED 30TH AUGUST; Last night at 3:30am, my best friend lost her battle to cancer and it has made me realise how important it is to live life to the full and take every opportunity thrown at us. She was a special girl and only 15 - wherever she is now though, she is out of her suffering. I have no doubt that she went straight to heaven.
