Chicken Drumsticks Pierre

"This is a very easy recipe for a chicken dish that will suit people who like their chicken spicy, but not TOO hot. Served on a bed of rice, it is colorful and elegant enough for company. UPDATE: I suggest that you not substitute regular mustard for dry mustard. Regular mustard is made by mixing dry mustard with a substantial amount of vinegar and will completely change the flavor of the dish."

  • Mix together the flour, salt and pepper.
  • Dust the drumsticks with the seasoned flour.
  • Melt the butter in a skillet with a lid.
  • Brown the chicken over medium heat on all sides.
  • Remove the chicken from the pan and drain on absorbent paper.
  • In the same pan, combine the tomatoes thru hot pepper sauce; bring to a boil.
  • Reduce the heat and return the chicken to the pan.
  • Cover and simmer about 45 minutes.
  • Serve with pan juice.
  • Good over white or brown rice.

  1. Wonderfully easy, very tasty! We increased the hot sauce a bit, and used celery leaves as I was out of celery seed. Served over potato gnocchi with steamed carrots on the side. I'm looking forward to trying this with pork chops, also. Thanks for sharing!
     
  2. I was disappointed with this recipe because I didn't think the sauce had nearly enough flavor. I doubt I'll make it again, but if I do I'll have to add extra spices

  4. Amazingly delicious!! Lots of flavor without lots of heat! My DH and I really enjoyed these drumsticks; we had them over brown rice, with some lightly steamed asparagus on the side. Yum!! The only changes I made were to reduce the servings to 2, sub olive oil for the butter, and use low sodium (diced) canned tomatoes. I also didn't have any celery seed, so I used celery salt (and a bit less regular salt). We're now able to buy organic chicken drumsticks at our local grocery store, so I wanted to find a recipe that would do them proud--this is definitely it! Thanks so much for sharing it, echo echo!!

I do make a couple teensy changes. I use chicken broth instead of water, I find it gives a little more flavor. I double (at least) the garlic (because who doesn't love garlic). I also use 2 tsp chili powder and 1-2 tsp cayenne instead of a hot sauce as we like our spice SPICY. Add some sliced red onions on top during the last 15-20 mins so they're soft but not mushy. BAM. So good. I typically serve this over rice with green beans & crusty bread on the side (for mopping up the delicious red sauce).

I do make a couple teensy changes. I use chicken broth instead of water, I find it gives a little more flavor. I double (at least) the garlic (because who doesn't love garlic).   2. Yum, this dish is great! I didn't have all of the ingredients on hand, but substituted a few things such as chilli sauce for chilli powder, vegetable oil for butter, cayenne pepper for hot pepper sauce. Also didn't have celery seeds or dried mustard but it didn't matter, the chicken turned out fantastic. Thanks for a quick, easy & tasty recipe!
     
  3. This is such a good recipe. It makes a nice weekday meal or is more than suitable to serve to company. The wonderful flavours are absorbed into the chicken. I did add some red pepper flakes instead of the hot pepper sauce. Try it, you won't be sorry!
     
  4. Fabulous chicken recipe. Succulent; delicious. The only change I made was to used a sprinkle of pepper flakes instead of the hot pepper sauce. I also skinned the chicken pieces - personal preference. I will definitely make this again.
     
  5. A good quick chicken dish that we all enjoyed. I didn't have celery seed or garlic, so subbed the salt with garlic and celery salt. Really easy to make and plety of flavour thank you.
