Chicken Enchilada Dip

"I found this dip on another site. I usually plan ahead and grill extra chicken a day or so ahead. However, the purchased grilled chicken would work just as well. Cooking time does not include preparing the chicken."

  • Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, shredded cheese, green chile peppers and jalapeno pepper.
  • Transfer the chicken mixture to a medium baking dish.
  • Bake uncovered at 350 degrees for 30 minutes, or until the edges are golden brown.
  • ***NOTE***I season the chicken with my favorite spices prior to grilling.
  • Fajita seasoning or Montreal seasoning work well.
  • The purchased grilled chicken would save a step, also.
  • I have added more or less jalapeno depending on the tastes of those I will be serving it to.

  3. The recipe sounds delish. My question is what makes it Enchilada? I don't see that sauce or ingredients.

  1. I have made this many times and it is always a huge hit! One thing I do if I don't have time to shred the chicken is to substitute 1 16oz can of drained black beans in place of the chicken. It's just as good and adds fiber.

  3. I made this for a potluck at work today. Last night I melted it all on the stovetop. I took a couple of bites and thought it was good. Then I put it in a mini crock pot & stuck it in the fridge over night. Heated up the next day at work and it was DELISH. I had many requests for the recipe so I better get typing on those!

  5. i have made tnis recipe soooo many times, i love it and so do my friends. u can also tweak it to make chicken enchlidas. its so good. and addicting. if u havnt tried this, u must, its very easy to make, u can even use a roasted chicken, my favorite roasted chicken is from costco. if u want to shorten the shredding time too. but that part is up to you. both ways are easy and good
