Directions

  1. Combine juices, herbs, spices, garlic, salt and pepper into a marinade.
  2. Marinate chicken breasts for 30 minutes.
  3. Grill or barbecue chicken for 2 minutes on each side or until done.
  4. Set aside.
  5. Heat oil in a large frying pan.
  6. Add onions, peppers and garlic.
  7. Cook for 15 minutes, stirring frequently.
  8. Do not overcook.
  9. Vegetables should be soft but not mushy.
  10. Add salsa and corriander.
