Marinated Chicken Fajitas

ingredients
- 1 lb boneless skinless chicken breast
- 1 large onion, sliced
- 2 large bell peppers, sliced
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 garlic cloves, minced
- 3⁄4 cup salsa
- 8 flour tortillas
directions
- Cut the chicken breast into strips.
- Mix onions, peppers, olive oil, lime juice, garlic and salsa.
- Add chicken and marinate 2-12 hours.
- Broil or pan fry all together until chicken is done.
- Divide among tortillas.
- Top with extra salsa, shredded cheese, lettuce -- however you like.
- ENJOY!

This is a fast, easy and delicious dish. I marinated the chicken, a clove of garlic and salsa for 2 hours and the onion, peppers, salsa and some garlic in another bag for 2 hours. I pan fried the chicken took it out and then pan fried the vegies till soft but still a little crunch and then added the chicken back in for a few minutes. Top the mixture with some fresh cilantro and served with Recipe#13100#13100, sour cream and some grated cheese on heated tortillas (used corn). Made for Fall PAC Orphanage 2009.

Yumm Yumm! This was very tasty super easy to make, and low cost! I reduced the serving to 2 for my lunch. I had enough to make one fajita and another for my freezer. I used garlic powder just because I was too lazy to chop up cloves. I also started with pre-cooked chicken and just threw it all in a pan. This was delsih! Very fresh tasting and will make again for sure! Thanks so much! Made for Fall PAC 2008

I am happily married with 2 sons, 16 and 5, they keep me quite busy but when I have an evening of peace I really enjoy cooking. I look forward to big family gatherings or game nights with friends...trying out new recipes and enjoying great food and friends. My mother really looks forward to trying new dishes and is always willing to be a guinea pig, she gives great feedback and I really love the opportunity to share my cooking with her--after all I wouldn't be much of a cook without her help!! My boys like to try new things so I really enjoy cooking for them, my husband is still set on pasta or pizza--without variation!! BUT we are working on him!! I enjoy just reading cookbooks, I have hundreds of them that I have collected over the years, someday I might have to thin out my collection a bit but until then....Happy cooking!!
