Chicken Fillet Skewers
"This is the most delicious marinade ive ever tasted! I found the recipe in a magazine, thought id give it a try, and its been a favourite of mine, and everyone elses, ever since!
Ive found the chicken skewers are great for a small but fancy dinner or to bring along to dinner parties - but make sure you bring printed out copies of the recipe or youll be in big trouble!
Ive also made this marinade seperately for pasta, couscous and stir-frying vegetables, and each time its been a huge hit!
The spices are a bit random, but its the most delicious flavour in the world! .. Straight from New Zealand!

- 500 g chicken fillets
- 1 teaspoon allspice
- 1 teaspoon thyme leaves
- 1 teaspoon black pepper (ground)
- 1 teaspoon oregano
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon hot chili powder (optional)
- 1 teaspoon garlic powder
- 3 teaspoons salt
- fresh lime juice
- 1⁄4 cup soy sauce
- 1⁄2 cup olive oil
- 1⁄2 cup white vinegar
- 1⁄2 cup red onion
- 3 garlic cloves
- 1 spring onion
- bamboo skewer
directions
- Skewer the chicklen fillets lengthwise and place in a shallow tray.
- Dice red onion, garlic cloves and spring onion.
- Mix with remaining ingredients in a medium bowl and pour over chicken.
- Marinate for at least 3 hours.
- Cook on a barbeque or grill.
