- 1 lb thinly sliced boneless skinless chicken breast
- 2 tablespoons canola oil
- 2 large eggs
- 1 cup all-purpose flour
- 3⁄4 teaspoon kosher salt
- 1 cup apple juice
- 1⁄4 cup fresh lemon juice
- 4 tablespoons unsalted butter
directions
- Heat oil in large skillet over medium-high heat.
- beat eggs in medium bowl.
- mix four with salt and spread out in a shallow dish.
- dip each chicken breast in the the egg, then the flour, shaking off any excess.
- fry 2 -4 minutes on each side until chicken breasts are golden brown and cooked through.
- transfer chicken to a plate.
- add apple juice to the skillet, scraping up any browned bits from the bottom. let apple juice cook several minutes until it is reduced by half.
- add lemon juice and butter to the skillet.
- when butter melts, return chicken to the pan, spooning over to coat chicken.
