  • Heat oil in large skillet over medium-high heat.
  • beat eggs in medium bowl.
  • mix four with salt and spread out in a shallow dish.
  • dip each chicken breast in the the egg, then the flour, shaking off any excess.
  • fry 2 -4 minutes on each side until chicken breasts are golden brown and cooked through.
  • transfer chicken to a plate.
  • add apple juice to the skillet, scraping up any browned bits from the bottom. let apple juice cook several minutes until it is reduced by half.
  • add lemon juice and butter to the skillet.
  • when butter melts, return chicken to the pan, spooning over to coat chicken.
