Chicken-Fried Hamburger

  • 1 lb 90% lean ground beef
  • 2 teaspoons chopped fresh parsley
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 egg
  • 2 cups crushed saltine crackers or 2 cups breadcrumbs, divided
  • 12 cup oil (for frying)

  • In a medium bowl, mix together the ground beef, parsley, chili powder, salt, egg, and 1 cup of crushed saltine crackers. Form into patties. Coat patties with remaining cracker crumbs, and place them on a plate. Refrigerate for at least 30 minutes.
  • Heat the oil in a large skillet over medium heat. Fry patties for about 7 minutes per side, or until the centers are well done and the outside is golden brown.

  2. I used ground turkey instead of hamburger, and added a bit of garlic as well. I also topped it with brown gravy. It was absolutely delicious! DH raved about it to all his co-workers who asked for the recipe! This also freezes well if you pre-make the patties. Then thaw overnight/day, roll in the breadcrumbs and fry them up!
     
  3. I loved these the first time I made them. Second time I decided to spice them up a bit. I added garlic powder, sea salt, celery salt and some onion powder to the breadcrumb mixture. 1/2 teaspoon of each. Really gave them a little extra kick.. Love them both ways!
     
  4. I used ground venison instead of the beef and I thought this was very good. All of my kids and hubby liked it too. I will be making this again! I may try topping it with some brown gravy next time. This will be one of my go-to recipes in a budget crunch since I usually keep all of the ingredients on hand.

After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
