Chicken-Fried Hamburger

- 1 lb 90% lean ground beef
- 2 teaspoons chopped fresh parsley
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 egg
- 2 cups crushed saltine crackers or 2 cups breadcrumbs, divided
- 1⁄2 cup oil (for frying)
directions
- In a medium bowl, mix together the ground beef, parsley, chili powder, salt, egg, and 1 cup of crushed saltine crackers. Form into patties. Coat patties with remaining cracker crumbs, and place them on a plate. Refrigerate for at least 30 minutes.
- Heat the oil in a large skillet over medium heat. Fry patties for about 7 minutes per side, or until the centers are well done and the outside is golden brown.

I used ground turkey instead of hamburger, and added a bit of garlic as well. I also topped it with brown gravy. It was absolutely delicious! DH raved about it to all his co-workers who asked for the recipe! This also freezes well if you pre-make the patties. Then thaw overnight/day, roll in the breadcrumbs and fry them up!

I used ground venison instead of the beef and I thought this was very good. All of my kids and hubby liked it too. I will be making this again! I may try topping it with some brown gravy next time. This will be one of my go-to recipes in a budget crunch since I usually keep all of the ingredients on hand.
