Directions

  1. Melt butter over medium heat.
  2. Add mushrooms and shallots and sprinkle with salt and pepper.
  3. Cook 10 minutes.
  4. Add chicken and cook 10 minutes on each side, or until no longer pink in the middle.
  5. Transfer chicken to a platter and sprinkle with cheese.
  6. Top with mushroom mixture.
  7. Cover and let stand for 5 minutes or until cheese melts.
