Chicken (In a Zucchini Bikini) Rissoles

"Rissoles are an Aussie classic! This recipe was made up by me when i had limited supplies and wanted my toddler to eat his vegies!!!! I am gluten intolerant, so this recipe suits me too. You may choose to serve with fries, as a burger in a bun/roll or atop seasonal mashed veg!"

  • Mix all ingredients together and shape into rissoles.
  • If you so desire (I desire), roll rissoles in gluten free bread crumbs.
  • Drizzle olive oil into your pan.
  • Cook in pan on medium-high heat.
  • When golden brown they are ready to serve!
  • Voila! Eat!
