- 3 lbs chicken, whole or 3 lbs chicken, cut-up
- 2 carrots, sliced
- 2 onions, sliced
- 2 celery ribs, Cut up
- 2 teaspoons salt
- 1⁄2 teaspoon pepper
- 1⁄2 1/2 cup chicken broth or 1/2 cup white wine
- 1 teaspoon basil
directions
- Put carrots, onion and celery in the bottom of your crock pot. Add your whole or cut up chicken and top with salt, pepper and liquid. Sprinkle basil over top and cook until done.
- Low 7-10 hours. High 3 to 4-5 hours. Remove chicken, vegetables with spatula.

I used this recipe to make Crock Pot Rabbit, and it turned out great! I used a large roaster rabbit (3.5lbs) and 1/2 cup chicken broth and the meat tasted just like chicken! The basil was a nice flavor also. I stuffed the cavity with the onions and put a handful of peeled garlic cloves in as well. I also used 2 more carrots and I served it all over rice. I made a quick gravy out of by adding about 1 cup of the juices to a small saucepan and adding 2 Tbs of cornstarch (mixed with 1/2 cup of cold chicken broth) some salt and pepper, and cooking until it was bubbly and thick. This is now one of our favorite rabbit meals.

I also added potatoes and used an additional 1 & 1/2 cups of chicken broth. Don't know if I needed more because I added potatoes or what. I also used my electric skillet to slightly brown my cut up chicken. I added some of the onion (I only used about 1/2 an onion total) w/the chicken and then simmered it in another 2 cups of chicken broth, then added it all to the crock pot. I was running short on time so I wanted to make sure the chicken was properly cooked. The recipe was a hit all around! One of the first time we didn't have ANY left overs! I think next time I might reduce the amount of salt, and then salt to taste when its done. I also added some flour close to the end to thicken up the sauce, made it more of a meal that way!
