Chicken in the Oven With a Little Bit of Butter

"Nana, my Dad's Mum came from England and despite what people say about "boring English cooking" this is really very tasty. The only boring thing about it is how easy and simple it is! It's pretty much exactly what it says... It's important to leave the skin on though, as skinless would be too dry."

  • 1.) Preheat oven to 375°F.
  • 2.)Remove chicken from package and lay in a large shallow casserole dish.
  • (I use my lasagna pan).
  • 3.) Place 1 pat (or one tsp) of butter on top of each thigh.
  • 4.) Sprinkle with remaining ingredients.
  • 5.) Bake about 30 minutes (or until done).
  • 6.) Serve with rice and a green.
  • If you do find this dull you can play with the ingredients quite a bit. You can substitute just about any herb for the parsley. oregano is nice, tarragon is lovely with this, even Montreal chicken spice or Greek seasoning. You can substitute garlic butter for the regular butter. You'd be surprised at how simple this is and how tasty it comes out just as is though. Yum.
