ingredients
- 2 stalks celery, sliced
- 1 onion, sliced
- 1 bell pepper, sliced
- 2 garlic cloves, minced
- 4 chicken thighs, with bones and skin, no need to thaw
- 1 (28 ounce) can crushed tomatoes
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄2 cup sherry wine
- 1 tablespoon red wine vinegar
- 1 tablespoon capers
directions
- Place all ingredients in slow cooker in order listed. Cook on low for 8-10 hours. Remove skin from chicken to serve. Serve with rice or pasta.

This was lovely, the only thing that wasn't true to the recipe was that I used chicken tenders and they were fresh, not frozen, with the result I didn't cook it as long about six hours on low. The smell in the kitchen when I came home was so so nice so fragrant, I served it with some homemade brown bread to soak up all the juices, It was so easy, just put in the cooking pot in order, put the lid on, and scoot out to work. I think this will be a regular in our house. Next time I will use frozen with bone in. Thank you for posting. Made for January warm up's 2011
