- 1 1⁄2 lbs chicken breasts, cut in strips
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon fresh ground black pepper
- 1 tablespoon vegetable oil
- 3⁄4 lb smoked turkey sausage, cut in 1/4-inch slices
- 2 onions, chopped
- 1 large green bell pepper, chopped
- 1 cup celery, chopped
- 1 minced garlic clove
- 2 cups uncooked rice
- 1⁄4 - 1⁄2 teaspoon cayenne pepper (caution!)
- 2 1⁄2 cups chicken broth
- 1 (15 1/2 ounce) can chopped tomatoes
directions
- Season chicken with salt and pepper and brown in hot oil in large saucepan.
- Add sausage and cook an another 2 to 3 minutes.
- Remove meats from pan; set aside.
- Cook onions, green pepper, celery and garlic in same saucepan over medium-high heat until slightly softened.
- Stir in rice, cayenne pepper, broth, tomatoes, chicken and sausage; bring to a boil.
- Simmer, covered, for 30 minutes.

Cut this in half for the two of us and still had enough for lunch the next day. It was quite good, very tastey, but a little loose. The rice was cooked just fine, I guess there was just a little to much liquid. Luckly enough we had some wonderful cajun bread to sop up the juice. I don't think the taste was effected at all, it was good. Thanks for posting.

This was really easy and quick, as well as tasty. I had most of the ingredients on hand, and managed to substitute others. I had some frozen turkey sausage patties, which I cut up and worked well. I didn't have enough plain rice on hand, so I used a box uf Uncle Ben's long grain and wild rice, put in the whole 32 oz. of chicken broth and added a little brown and white instant rice. I almost always add an extra Knorrs boullion cube to chicken broth for extra flavor. Found some medium spicy salsa in the frig and put about 3 T. of that too! I'm a little wimpy when it comes to spicey, so this was perfect and my family just adds a little tabasco if they need it. They didn't.

I made this tonight for my family and they loved it! My husband wants it again next week! I made a few substitutions: roasted turkey for the chicken breast, hot italian turkey sausage for the smoked turkey sausage and stewed tomatoes for the chopped tomatoes. It all came out wonderful and delicious! Thanks for sharing!
