Chicken Lentil Soup With Kale

  • In a large saucepan, heat oil over medium-low heat. Add onion, carrot, and garlic. Cook, covered, for 5-7 minutes or until vegetables are nearly tender, stirring occasionally.
  • Add broth, bay leaves and, if using, dried basil to vegetable mixture. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes.
  • Stir in kale, lentils, salt and black pepper. Return to boiling; reduce heat. Simmer, covered 10 minutes.
  • Stir in chicken,tomato, and , if using, fresh basil. Simmer, covered, for 15-20 min more or until kale and lentils are tender.
  • Remove bay leaves before serving.

  1. I made this recipe a while ago and loved it. When I made it this time, something was different...I remember adding two different kins of lentils (although I just added more of the kind I liked)....I like that the broth wasn't clear once the lentils cooked down. This time, the liquid was more clear. Did this recipe change?

  1. Delicious!!! I added celery, portobello mushrooms, fresh parsley, a can of diced tomatoes, instead of kale I used frozen spinach, that’s what I had on hand. I also added some cumin. Green lentils are what I used. My husband’s raving!!
     
  2. Very good and healthy soup! I used turkey instead of chicken. Also added 2 cups more of broth. But that is just a personal preference. I highly recommend this recipe.
     
  3. I added about a cup of celery leaves and stalks, and some fresh ginger. This was delicious.

  4. Beautiful, yummy, hearty, but much too salty. Definitely cut down on the salt next time. I will make again. Family loved it and wouldn't have said anything about it being salty had I not pressed them. I added a little bit more chicken broth as it seemed a little thick. I was looking for more broth.

  5. Really tastey. I used a can of diced tomotoes, since the good ones are out of season right now, and threw in some celery I needed to use up. I also used a kale/spinach mix. Otherwise, I made the recipe as written.

Tweaks

  1. I added a bit more chicken broth so the soup wouldn't be as thick.
     
  2. Delicious and inexpensive, easy to make. I added a lot more black pepper and used a can of italian diced tomatoes instead of chopping a whole tomato. Everyone loved it, it was great with brown rice.
