Indian Chicken Makhani

ingredients
- 2 cups cooked white rice
- 1 tablespoon vegetable oil or 1 tablespoon canola oil
- 1 lb boneless skinless chicken thighs or 1 lb boneless skinless chicken breast, cut into bite-size pieces
- 1 finely chopped med-large onion
- 1 teaspoon finely grated gingerroot
- 1 teaspoon minced garlic
- 2 teaspoons garam masala
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1⁄2 teaspoon ground red pepper
- 1 (15 ounce) can tomato sauce
- 1 ounces nonfat sour cream (not sweetened) or (12 ounce) can fat-free evaporated milk (not sweetened)
- 2 tablespoons butter or 2 teaspoons Butter Buds
- 2 teaspoons lemon juice
- 1 bay leaf
- salt and black pepper
directions
- Start cooking rice.
- Cook chicken in oil in a large pot over med-high heat until just starting to brown.
- Add onion and some salt, stir until the onion is soft.
- Add ginger and garlic; stir for 2 minutes. Sprinkle on garam masala, chili powder, cumin, and red pepper, stirring for 2 minutes.
- Stir in remaining ingredients and bring to a boil.
- Reduce heat and simmer uncovered for 20 minutes.
- Remove bay leaf and stir in prepared rice. Taste for more salt and black pepper.
- Plate and garnish with chopped scallions/green onions and/or cilantro (if desired).

This was amazing! I added a little more garam masala, another garlic clove (both crushed)and a few thai chiles while it simmered, we subscribe to "If you're not sweating, you're not eating." I replaced the rice with cous cous and left it separate. Wrapped it all up in rotis. It was so good my hubby is already asking me to make it again and it has only been 2 days! ADDITIONAL NOTE: I combined all the dry spices in a plastic container and made enough for 6 batches of chicken. Now when I want it I just need to scoop it out!

Very delicious! Thanks for sharing. I didn't have a bay leaf, though, so I omitted it and used Greek yogurt instead of sour cream. However, we followed the spices and everything else to a T. I didn't think it was "spicy" and I'm very sensitive to heat (jalapenos make my eyes water). Perhaps people who thought it was aren't accustomed to the many different spices in Indian dishes. I also agree with another reviewer- very adaptable! We've made this a few times now and I keep coming back to look at this recipe again.

This is an amazing site! (200+ recipes for Tiramisu!!) I'm a single dad with a great 15 yr old son. He and his friends love to eat but I love to cook so it works. Between work and keeping up with house duties there's not a lot of time for hobbies. That's what I consider cooking to be and I always make time for it.
