  • Mix all ingredients in a bowl.
  • pour into large loaf pan.
  • Bake in preheated oven 350°F for 1 hour.
  • Let stand 15 minutes before slicing.

  1. I was unsure about using ground chicken, but it is delicious, as good or better than turkey and beef. I used whole foods brand chicken stuffing (1/2 bag), a mix of onion and celery that I sauteed first in olive oil, and added a little ketchup to the meat mixture. Mixed BBQ sauce and ketchup for the topping. Will definitely make again! *I also omitted the parmesan.
     
  2. AMAZING! I stir fried onions and garlic (used 8 cloves with some chopped up mushrooms) then added it to the chicken breast that I ground in my food processor. I added 1/2 cup of italian bread crumbs then added 1/4 tsp ground pepper and 1/2 tsp. all meat seasoning. It was sooooo delicious! This is a recipe keeper! Thanks so much!
     
  3. I would saute onion a bit before adding to mix. The Onion was not cooked enough. The taste was great.

  5. We love trying different types of meatloaf and this one turned out very well. The texture was firm and the loaf held up well to slicing. Wasn't sure I would like the stuffing mix, but the sage flavor was detectable, but not too strong. I dipped mine in a little ketchup (childhood habit). Also makes great sandwiches. Thanks for the recipe.
