ingredients
- 2 lbs chicken breasts
- 1 cup frozen corn
- 1 (15 ounce) can diced tomatoes with juice
- 1 (15 ounce) can black beans
- 1 (10 1/2 ounce) can cream of chicken soup, mushroom or (10 1/2 ounce) can celery
- 2 cups cooked spanish rice
- 1 (1 1/4 ounce) envelope taco seasoning
directions
- Put everything in a pot (along with enough water for desired consistancy)and simmer on a low boil, covered (approximately 1 hour) When chicken is cooked, remove from pot and shred. Return to pot. You can serve chowder with shredded cheese, a dollop of sour cream or sliced avocado.

I love to cook, no doubt about it. All of my family gatherings inspire lots of new menus and recipes. I love all kinds of foods from different countries and I try to mimic as many as I can. I am lucky to have such a brave family that eats or at least tries all of my accomplishments and failures in the kitchen. Right now I am really into perfecting my pancakes and fried chicken. I've kind of gone back to the basics in the kitchen that a lot of people overlook or rely on convient frozen or boxed versions. When I'm not cooking I'm entertaining 3 children, a dog and 3 cats...and a husband too!
