  • Melt butter in large pot.
  • Sauté the celery, carrot and onion for 5 to 10 minutes.
  • Add thyme, poultry seasoning, chicken broth and bouilion.
  • Bring to a boil.
  • Add noodles and chicken and cook on low for 20 minutes.
  • Sprinkle with parsley.

  1. Stupid question but bouillon.... if i have the solid cubes do I mix the squares with boiling water and then use 2 tsp of it or use 2 tsp of the solid bouillon cubes??

  2. I've also found that if you add a can of evaporated milk when you add your chicken and noodles, it thickens the soup up and makes it nice and tasty.
     
  3. This was my first time cooking homemade chicken soup as well, a delicious, easy recipe. I only had 3 cans of broth; I added one can of water, added a little more boullion. I also used orzo rather than egg noodles. I think I put too much orzo in; as the orzo expanded the broth decreased, so I added about about 3/4 of chicken stock. Thanks for a great recipe, Inez!
     
  4. Great, easy recipe! I bought a rotisserie chicken and cut the meat off the bones, using half for this recipe and half for HDMac's "White Cheese Chicken Lasagna." (Also delicious BTW) I used extra egg noodles (about 2 cups dry) and extra potatoes (2 small) because my kids like their soup thick and with lots of noodles. Our whole family enjoyed this! We did not think it had too much seasoning, but we generally use a lot of spices in our cooking.
     
  5. This is the 3rd chicken soup recipe I have tried and there is always something I didn't like about the soup. UNTIL NOW. I should have saved myself a lot of trouble and started with your recipe since you and I must have the same type of taste buds because I've never met one of your recipes that I don't like.<br/><br/>My search for the perfect chicken soup is over.

Tweaks

  1. Added quite a bit of salt and pepper to bring out the flavors and add a bit of spice. Also added some garlic powder. I used leftover rotisserie chicken in place of the chicken breasts.
     
  2. FANTASTIC! This was so easy and so delicious, my husband can't stop raving about it! I used some leftover chicken drumsticks we'd roasted, and just cut the meat off the bone. I didn't have poultry seasoning so just added a little dried sage & dried parsley instead. We loved it!!
     
  3. Wonderful soup. I'm made other types of soup from scratch before but never chicken noodle, and I knew I could count on your recipe to be a home run, Mizz Nezz. Minor changes I made to this recipe were to use olive oil instead of butter for my lactose-intolerant hubby, and for a more savory soup I used a full bouillon cube and also a dash of red pepper flakes. Also, I did not have egg noodles, so I used cut spaghetti. The next time I make this soup, I'll nix the potato, as I don't think the recipe needs it with the pasta already included. Thank you for this easy recipe!
     
  4. This was a great chicken noodle soup recipe! I followed the preparation exactly as written, for the poultry seasoning which I did not have on hand; I also used chicken stock instead of broth and added an extra potato. Those were the only deviations. I think I will buy the poultry seasoning or make a homemade one to use next time, but this soup was excellent without it. This one is a keeper for sure! Thank you for sharing.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
