  • Wash chicken, do not cut up, leave whole.
  • Place chicken in Dutch oven, cover with water.
  • Add 1/2 t.
  • salt per pound of chicken and the pepper.
  • Heat to boiling.
  • Reduce heat.
  • Cover and simmer 1 1/2 hours or until chicken is tender.
  • Remove chicken from pot.
  • Remove meat from bones; cut into small pieces.
  • Skim any fat from broth.
  • Measure out 5 cups of broth and place into large saucepan.
  • Add chicken and remaining ingredients.
  • Heat to boiling.
  • Reduce heat and simmer until noodles are tender, about 10 minutes.
  • Remove bay leaf before serving.
