Directions

  1. In a small bowl, combine reserved tomato liquid, olive oil, mint and garlic to form dressing; stir.
  2. In a larger bowl, combine cooled pasta, diced tomatoes, chicken chunks, cucumber, green onion and feta. Add tomato dressing and toss to coat.
  3. Refrigerate to chill, at least 30 minutes. Stir in spinach just before serving.
