- 1 tablespoon oil
- 1 1⁄2 cups rice
- 3 cups chicken broth, rich
- 1 teaspoon turmeric
- 1⁄2 teaspoon cumin, ground
- salt and pepper
- 1 garlic clove, minced
- 4 shallots, minced
- 3 sun-dried tomatoes, packed in oil, drained and chopped
- 1⁄4 cup chicken broth
- 4 cups cooked chicken, diced (leftover chicken is fine)
- 1⁄4 cup pine nuts, toasted
- 1⁄4 cup parmesan cheese
directions
- In a covered Dutch oven casserole, simmer together first 6 ingredients for 30 minutes, or until rice is tender and liquid is absorbed. Meanwhile, in a saucepan, cook together the next 4 ingredients until shallots are soft. Stir in the chicken and heat through. Stir tomato mixture into rice until blended. Place paella in a large shallow bowl and serve with sprinkled pine nuts and cheese.

My wife loved this recipe! Thank you! I bought too many pine nuts, added closer to 1/2 cup and for me it was too much, but she said she didn't notice. Phew! The rice came out perfect (I used brown rice and it worked fine). It did have to cook a little longer, but just waited until the broth had absorbed. We will add this to our regular family "menu." Thanks again!

I didn't use a Dutch oven, just a large covered pot, worked very well. I love the addition of cumin and turmeric, gives a lovely colour and aroma but still mild enough that my daughter happily ate it (despite sniffing suspiciously, lol!). I didn't have leftover chicken so cubed and cooked two chicken breasts, and once they were nicely browned, added the sun-dried tomatoes, shallots, etc, mix, and cooked them all together. This was so easily prepared and just delicious, we all enjoyed this and will be making it again! I added the pine nuts but not the parmesan cheese .. I have to be honest, it just doesn't need it, and although I love parmesan and will throw it on a LOT of dishes, I just didn't feel it was going to add anything to the dish here. Perhaps some finely chopped herbs, rather. Thank you Nancys Pantry, lovely recipe, will be making this again!!! Made for Make My Recipe tag game.
