Chicken Parmesan

"I've been making this for years and I can not remember when someone has not asked for the recipe. Note: you can't go overboard on the flour or breadcrumbs, since the chicken will only take whatever amount it needs to be coated"

directions

  • Preheat oven to 400 degrees.
  • With a mallet pound chicken to 1/4 inch.
  • Dredge in flour.
  • Coat in egg mixture.
  • Shake off excess and coat in bread crumbs mixed with 1/4 cup of the parmesan cheese.
  • Place in casserole sprayed or coated with oil.
  • Bake 20 minutes.
  • Remove from oven.
  • Spread some tomato sauce combined with the basil on top of each chicken breast.
  • Cover with mozzarella cheese.
  • Sprinkle with with the remaining 1/4 cup parmesan cheese.
  • Use any remaining tomato sauce to cover the edges of the chicken as they cook faster.
  • Place back in oven and cook for 15 to 20 minutes.
  • Serve with penne (or your favourite pasta) alfredo and a salad and garlic bread.

  2. Dee-LISH!!! Everyone thoroughly enjoyed dinner last night, especially our guest who could not stop commenting on how tender the chicken was and how it was the best Chicken Parmesan he ever had. I used fresh bread crumbs and seasoned them with Italian Seasoning. I popped them in the food processor along with the Parmesan cheese to get them both to the same consistency. I also used a jar of Classico Fire Roasted Tomato and Garlic Sauce for the tomato sauce. Very easy! I served it with a garden salad, garlic bread and spaghetti. Thank you chef! This is a keeper!
     
  3. This got rave reviews from my family tonight. Me too! This is a delicious chicken parmesan recipe. I used Italian seasoned bread crumbs and bottled spaghetti sauce instead of the tomato sauce because I was out of the latter. Thanks so much for sharing!
     
  4. I've made this twice so far...the only times I've ever made chicken parmesan...and it is SO amazingly good!! At least as good, if not better than the Olive Garden...which is really the only thing I can compare it to...I will always use this method, changing it up here and there depending on what ingredients I have on hand...I used a panko/parm breading both times..but the second time I forgot to season the mixture...and instead of tomato sauce with basil I just used canned spaghetti sauce...though I will try it the way it's written someday when I'm not in such a rush...the first time I made it I forgot to put extra parm on top of the mozzarella...and the second time I used provolone because I forgot to buy some mozzarella (which was really really good btw) Someday I'll get it right, but even with my mix ups this is a phenomenal method...and it's not fried!!! LOVE IT! ;O)
     
  5. I thought I had reviewed this last night but evidently there was a snafu so I will try again. I made this recipe yesterday and it was fabulous! I have never before found a chicken parmesan recipe which tasted even close to a good restaurant. This is not only easy to make...but absolutely terrific. It smelled so wonderful when it was baking and looked so good that I couldn't wait to taste it. Neither DH or I were disappointed. It was moist, tender, done to perfection and the perfect balance of flavors! Thank you so much 'Chef at Heart' this recipe is a winner!...a helpful note to others, I didn't pound my chicken because of my arthritis but it didn't affect the results at all, since these breasts weren't too thick. Also to minimize the cleanup I put the flour, the egg, and the crumb/cheese mixture in deep paper plates and used a small fork or each plate. When I was done, I simply drained the leftover egg down the sink and then threw all three plates in the trash! Super easy!

Hi, I am currently taking my masters in social work, but cooking is my passion. I just would not be able to stand the hours working in a restaurant. I would never see my husband. So I am an amateur chef. I judge cooking contests like the Canadian national BBQ tournament etc. and love cooking for friends and family. I have a cookbook in process. Who knows if I will ever try to publish it but I will definitely give it as gifts to friends and family. My favourite parties to host are theme parties eg. I Okboberfest, Mexican and Thai etc. I generally do the research and each person can either choose from the recipes I have found or bring one of their own. I like to give the option since a lot of people don't necessarily have any recipes for that particular theme party. Anyway its fun. I nice break from University and a really good excuse to get together with friends and family. My other favourite things are gardening, knitting, sports and fitness. I also volunteer for a nursing home working with altzheimers and senile dementia patients, and for big sisters and I work part time for Planned Family Networks matching young adults with mental and / or physical challenges with a network of people they can count on when their parents can no longer take care of them. FYI This was the only day I've ever had straight hair. It was great while it lasted but I'm not spending an hour staightening it whan I can shower and do practically nothing by leaving it curly.
