Chicken Parmesan for Crock Pot

"Chicken parmesan without all the work. Thin sliced eggplant makes a wonderful addition to this great recipe."

  • In a bowl beat egg, salt, and pepper.
  • Dip chicken into the egg, then coat with crumbs.
  • In a large skillet, saute chicken in the olive oil, adding more if necessary.
  • Arrange eggplant and the chicken in pot, (place eggplant on the bottom or it will not cook completely.) Pour pizza sauce over the chicken.
  • Cover and cook on low 6 to 8 hours.
  • Add mozzarella cheese; sprinkle Parmesan cheese on top.
  • Cover and cook 15 minutes more.

  1. WOW!! I was a little sceptical as to how this would turn out but shame on me for being a doubter. This made an excellent chicken parmesan and as you said, without all the work. I liked the inclusion of the eggplant, too. Sauteing the chicken beforehand I think contributed to the success of this dish. I served the chicken and eggplant with noodles. Thanks for making a believer out of me ;)
     
  2. Wow! This was a huge hit with both me and my husband! Normally, my husband does not like chicken in the crock pot, but I decided to try one more recipe and he LOVED it! I think sauting the chicken before putting in the crock pot made a big differnce. The recipe was very easy to make and the eggplant was such a wonderful addition.

I made this last night and the only "tweaking" I did was, instead of using pizza sauce, I used what I had in my pantry (1 can of diced garlic/basil tomatoes, 1 can tomato sauce & 1 can tomato paste) and it was FANTASTIC! I served mine over ziti with sides of a green salad and garlic bread...a hit with everyone in the family AND I'm looking forward to leftovers for lunch today! AWESOME!!!

  5. Great recipe! I skipped the first part of sauteing/breading the chicken and just made this the easy way. It was so yummy! My 3 year old gobbled it up. Thanks for sharing-- what a great keeper!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
