Chicken Parmigiana Pie

"I wanted a parma pie without using bisquick (we don't have it here in Oz)so went searching, I found this on a low-carb web site. I'm posting the recipe as written but I simply combined all the ingredients together,(except water)spooned into pastry, wacked them in the pie maker & voila, chicken parma pies!"

  • Heat oven to 200.C.
  • Spread cottage cheese on the bottom of a glass pie plate and then sprinkle with parmesan cheese.
  • Mix chicken & 3/4 cup mozzarella cheese with the herbs & tomato paste and then add eggs.
  • Mix cream with water and add to the chicken mixture.
  • Pour into pie plate and bake for 25-30 mins (some cream will rise to the top).
  • Top with remaining mozzarella and bake for 5 mins more.

  1. We really liked this (especially my 1 year old). I didn't think it would fill a whole pie pan so I lined a small oblong dish with a pre-made crust, mixed all other ingredients in a bowl (with just a little water) and spooned into the crust. Then I topped with a bit of the mozzarella and folded the crust over the top. Took the whole 30 minutes to brown the crust at 400 F, and the cheese that was showing was beautifully browned. I used some leftover chopped chicken, and replaced the egg with an "egg-replacer" (NOT an egg substitute like "egg-beaters") as my DD is allergic to them, and it worked just fine. Thanks for this different and yummy new dish!
     
  2. This was simple to make & great tasting. I love the pie crust suggestion. I did substitute ricotta cheese for the cottage cheese but other than that I followed the recipe. Made for Newest Zaar Tag

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. Alyssa was made a big sister on the 19th April 2010 when our cheeky little boy Blake was born. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
