Chicken Pesto Pasta

"This is a nice simple to prepare & tasty pasta, if you don't have sun-dried tomatoes just use some fresh chopped ones & you can also experiment with different flavoured pestos, I usually use basil pesto but will be trying sun-dried tomato pesto next time."

directions

  • Heat oil & saute onion & garlic until tender, add mince, brown well breaking it up with a spoon as it cooks.
  • Stir in sauce, cream, tomatoes & seasonings, simmer for 5-10 minutes.
  • Cook pasta in boiling salted water until tender, drain & toss through sauce.
  • Top with basil & parmesan to serve.

  4. Nice dish. I added more garlic and more pesto, I just couldn't help myself. Made for lunch today, DH gave the heads up too. Made for 123 tag.

I used about 3-4 Tbls sun dried tomato pesto in addition to the basil pesto and still found it bland, but I (and my family) thinks it needs less pasta. Next time I will only cook about 4-5 ounces of pasta and see how the flavors balance out. I also subbed lowfat milk for the cream and it was fine for us. I also added a few sliced mushrooms and fresh spinach that needed to be used up. Fresh parmesan is a must--no green can stuff! Thanks for posting!

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
