Ingredients Nutrition

  • 1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
  • 1 lb shredded cooked chicken
  • 1 (15 ounce) can green enchilada sauce
  • 1 (4 ounce) can diced green chilies
  • 1 (8 ounce) bagcrystal farms shredded monterey jack cheese

Directions

  1. Preheat oven 400°F.
  2. While chicken is cooking combine green chili enchilada sauce and diced green chilis in a bowl.
  3. Stir in potatoes until coated.
  4. Stir in 1 cup of shredded cheese reserve 1 cup for later.
  5. Stir in cooled shredded chicken.
  6. Pour into lightly greased 9x13 pan.
  7. Sprinkle remaining cheese on top.
  8. Bake at 400F for 45 to 50 minutes.
