Chicken Quesadilla Pinwheels by Rachael Ray

"Looks delicious, just wanted to get it in my cookbook with the nutritional info. Serve these with the Garden Salad with Smoked Almond-Cilantro Dressing. I think this would also be great with a chipotle ranch dressing."

  • Heat a large skillet over medium heat.
  • Add flour tortillas and blister 1 side of tortilla, turn over, and top cheese.
  • Then top with 1/4 cup salsa, spreading it evenly.
  • Top with 1/2 cup chicken; roll into a log.
  • Let stand a minute, and cut into wheels.
  • Repeat with remaining ingredients.

I live on a cattle farm in a rural part of Missouri. I am originally from the St. Louis area. I teach high school students. I love to cook, and EAT. I have a 2yr old son, and he loves the kitchen as much as I do. I love just about any dish with cream cheese in it. I'm known for my clean-out the kitchen recipes. If I had more time, I would watch Rachel Ray and cooking shows all day, but work and a child don't allow much of that.
