“This is a great recipe for a quick meal without having to go to the mexican restaurant. I take frozen chicken add a few ingredients and cook then shred the chicken and use to make quesadillas. My husband and I love mexican food but I like to cook at home and this is a fun and easy recipe that I can whip up in just a few minutes. This would be a great appetizer for a party, just put the oven on 200 degrees to keep the quesadillas warm until serving time.”

  1. Mix salsa, fajita seasoning and water in a 12 inch skillet and add chicken.
  2. Cover and cook on medium heat until chicken is cooked through and water has evaporated usually about 20 minutes for frozen meat and about 10-15 minutes if meat is thawed out. You may need to add more water if the chicken is cooking slowly so the mixture does not burn.
  3. Once the chicken is cooked thoroughly shred the chicken and continue cooking until water has evaporated. Remove and set aside.
  4. Heat skillet to medium low heat. Take one flour tortilla and butter one side, place butter side down in skillet.
  5. Top with cheese, chicken mixture, a few mushrooms, and more cheese.
  6. Butter the next tortilla, place butter side up on top of cheese and chicken mixture.
  7. Once the cheese is melted or bottom is browned, flip quesadilla and cook on other side.
  8. Make sure cheese is melted and remove from heat slice into 8 pieces and serve. Repeat for each quesadilla.
  9. I serve this with mexican rice or just as is. You can also use this for an appetizer and serve more people.
