Chicken & Rice

"This is one of my mom's old recipes that I grew up with. It is definately something that brings back memories! She would make it with a whole chicken cut up but I make it with just chicken breasts because I find it easier to just throw it all in there."

  • 4 -6 boneless skinless chicken breasts
  • 1 cup rice
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 (10 1/2 ounce) can cream of chicken soup
  • milk
  • 1 (2 1/4 ounce) can sliced mushrooms
  • 1 (1 1/4 ounce) envelope Lipton Onion Soup Mix

directions

  • Mix rice, soup, milk (just fill 1/2 of the soup can with milk) and mushrooms.
  • Put in greased 9x13 pan.
  • Place chicken on top of rice mix.
  • Sprinkle dry soup mix over top.
  • Cover with foil.
  • Bake at 325 degrees for 2 hours.

  1. I was very disappointed with this recipe. I picked the recipe as I had all of the ingredients on hand and I thought my family would enjoy it. I followed it to the T assuming that the milk was 1 can. The rice was a starchy glob and the chicken breast were rubber. 2 hours was way too long for this to cook. Let's just say I had to cook a second dinner the night I made this.
