- 3 -4 boneless chicken breasts, cubed
- 3 -4 tablespoons olive oil
- 1 small diced onion
- 1⁄2 whole green pepper, diced
- 1⁄2 whole red pepper, diced
- 1⁄2 cup hot cherry pepper
- 4 minced garlic cloves
- 1 (8 ounce) package mushrooms
- 1⁄4 teaspoon oregano
- 1⁄4 teaspoon basil
- 1⁄4 teaspoon parsley
- 1 cup sherry wine
- 1 cup chicken broth
- 1 (28 ounce) can crushed tomatoes
- 1 pint heavy cream
- 1⁄2 cup parmesan cheese
- mezzi rigatoni pasta
directions
- cook rigatoni.
- In a large pan, saute chicken in olive oil.
- add diced onion, green pepper, red pepper, hot cherry peppers, garlic, mushrooms, oregano, basil and parsley.
- Cook for about 10 minute.
- add sherry, chicken broth.
- cook for 5 minute.
- add crushed tomatoes, heavy cream, parmesan.
- cook for an additional 10-15 minutes.
- serve over rigatoni.
