  1. Sauté chicken in 1 tablespoon olive oil until cooked through. Remove from pan. Add garlic, onion and bell pepper and sauté 5 minutes.
  2. Add rice to saucepan and cook, stirring frequently, 3-4 minutes. Heat chicken broth to boiling. Add 1 cup to rice; cook, stirring constantly, until liquid is absorbed.
  3. Continue adding broth ½ cup at a time. Stir in chicken; cook 2-3 minutes. Stir in salt and pepper. Serve topped with cheese.
