Directions

  1. In an large pot, cook rotini according to package directions and drain. Set aside.
  2. Heat olive oil in the same pot used for pasta.
  3. Add chicken, onion, garlic and salt and saute over high heat 4 mins, stirring frequently.
  4. Add rice vinegar and basil and continue to cook on high 2-3 mins or until most of the vinegar has evaporated.
  5. Stir in stewed tomatoes and heat through.
  6. Serve over rotini.
  7. If desired, sprinkle with grated Parmesan cheese and fresh-ground black pepper.
