Chicken Salad

"This is super fast when using a store-bought rotisserie chicken. I buy one from our local market that uses only sea salt and pepper on it. I try to find a very light one, so that it won't be dry. The amount of mayonnaise needed varies, according to the size of the chicken. I like to serve it on a soft whole wheat bread or on soft egg bread, with the crusts removed and the sandwich cut into triangles. The herbs must be fresh, not dried. If you don't like cilantro, use fresh dill."

  • Place chicken meat in food processor and pulse until it becomes very small pieces - remove to large bowl.
  • Add scallions, apples, cilantro, parsley, celery salt and pepper to chicken.
  • Mix in mayonnaise and prepare sandwiches, or serve individually by placing a scoop on a butter lettuce leaf.

  2. This is so yummy! I was very hesitant about the apples... but it was amazing and something i cant wait to make again. We used one apple and one tomato and we cooked up two chicken breasts and shredded them. Great recipe thanx!
     
  3. This is a wondeerful recipe. My food processor was n ot working so mine was a lot chunkier, but I like it that way. It need a touch of something possibly nuts or grapes. This is a salad that I would make again. FYI make sure you go light on celery salt. I put a tad too much in like an 1/8 of a teaspoon over accidentally and it was too salty.
     
  4. I used leftover roasted chicken for this. It was absolutely wonderful! I used the white and green parts of the scallions. We picked Gala apples over the weekend so I used those. I loved the sweet crunch from the apples. Thanx for a great lunch salad!
