Chicken Salad Sandwiches En Casserole

  • Preheat oven to 350 degrees. Trim crusts from bread.
  • Blend the margarine and mustard. Spread on one side of each bread slice.
  • Put 6 slices of bread, buttered side up, in an 11x2x2 baking dish.
  • Combine chicken, cheese, red pepper, salt and pepper. Spread over bread slices in baking dish.
  • Cut remaining 6 slices of bread diagonally. Arrange over chicken in baking dish, buttered side up.
  • Combine soup and peas. Spoon over and around "sandwiches".
  • Bake at 350 degrees for 25-30 minutes until center is hot. Lift out sandwiches to serve.

  3. WOW, what a great discovery. I loved this. I did take the easy way and layered the chicken, cheese (fat free) and red pepper instead of chopping and mixing. I thought I was grabbing chicken soup but got a can of mushroom which I only noticed when I opened it. It worked though. I baked this on the bottom oven rack and the bottom layer of the sandwich toasted beautifully. It all turned out yummy and I need to say that the mustard added a real flavor perk.
