Chicken Sate with Peanut Sauce

"We prefer the chicken breasts whole, with the sauce accompanying, but you can cut it into chunks and skewer it if you prefer. The sauce is SO good that I eat the leftovers with a spoon! (Also very good on toasted English muffins...)"

  • Combine butter, 1/4 cup soy sauce, coriander, and 2 Tbsp lime juice. Marinate chicken in this while you make peanut sauce: Saute onion and garlic in oil until tender.
  • Cool.
  • Place in blender, add everything else, and blend carefully.
  • Slowly and carefully add enough boiling water to form a thick paste. Now, broil chicken until done, basting with marinade. Serve with peanut sauce.

  1. Yum -- well worth it! I added yogurt to the peanut sauce to make the paste instead of water and it was a big hit. I served it with cool cucumbers in a yogurt-vinegar sauce (yogurt, vingegar, sugar) and some rice.

  2. I made the chicken but didn't make the peanut sauce, as we don't care for it, but the chicken was excellent and we loved it!

  3. Very good, i would definitely make this again. Heard no complaints at the table.

  4. Very yummy. I marinated it for longer than suggested. I had a bit of trouble grinding up the peanuts, but it turned out well in the end.

  5. Delicious.....worth the work...

Tweaks

  1. SUPER-YUM!!! My family loved this dish! I let the chicken marinade for about 5 hours, and tossed the leftover marinade instead of basting with it to prevent contamination. I tweaked the sauce a bit by upping the cayenne and ginger, and adding some turmeric (my naturopath recommended adding it to my diet). Chicken took about 10 minutes per side to broil, and I finished it up by brushing it with a bit of the sauce and putting it back under the broiler for a bit. Really delicious and easy! Plus I loved that the sauce was mostly raw, used real peanuts instead of butter. The less processed foods we eat, the better!
