Directions

  1. Sprinkle herb seasoning over chicken.
  2. Place chicken breasts between 2 sheets of wax paper and pound lightly with a mallet to flatten.
  3. Dredge chicken in flour, shaking off excess.
  4. Heat a nonstick skillet over medium high heat. Add oil and HALF the butter.
  5. When hot, saute' chicken, in batches if necessary, 1-2 minutes per side, until browned. Transfer to serving dish.
  6. Sprinkle with lemon zest and salt and pepper to taste. Set aside and keep warm.
  7. Add 2 teaspoons remaining flour to skillet and cook about 1 minute, stirring constantly until smooth.
  8. Whisk in chicken stock and lemon juice.
  9. Bring to a boil and simmer 2 minutes, stirring constantly until sauce begins to thicken.
  10. Remove from heat. Stir in remaining butter until incorporated.
  11. Serve sauce over chicken.
