  • Pound each chicken breast half to 1/4-inch thick with meat mallet or rolling pin.
  • (I put them between 2 sheets of plastic wrap first).
  • Brush chicken with juice and sprinkle with salt and pepper.
  • Dredge chicken in breadcrumbs.
  • Heat a large nonstick skillet to medium-high heat and coat with cooking spray.
  • Add chicken and cook for 3 minutes or so on each side until chicken is done.
  • Remove from pan and keep warm.
  • Add broth and wine to pan.
  • Cook 30 seconds, stirring constantly.
  • Remove from heat.
  • Stir in capers and butter.
  • Spoon 1 tablespoon sauce over each chicken breast.

  1. Looking for Chicken spiedini with capers and found this...wonderful! Added more lemon over chicken breasts before drizzling over the sauce. Also added sliced black olives and doubled the sauce. Also cooked the chicken in olive oil instead of spray. Turned out GREAT! Thanks!

  3. Wonderful recipe as is and even better the next day. I also enjoyed a leftover scallopini in a sandwich with lettuce and tomato. Yum.
     
  4. Chicken Perfectini! Restaurant quality without all the fat. I sliced the chicken breasts in half width-wise in addition to pounding them, and they were tender enough to cut with a fork. I also used panko instead of bread crumbs. A delicious quick recipe if you love lemon and capers.
     
  5. We had this for supper tonight and it was excellent. I also doubles the sauce. Next time I will thicken the sauce. That's the only change I would make. Served with buttered linguini and steamed green beans. Gloria

I live in the San Francisco area and love it here. I discovered Recipezaar (then Food.com..Genius Kitchen) in 2001 and have been so happy to have my favorite recipes stored safely here. I am mother to 7 and grandmother to 7. I love to knit, smock, sew, etc., but my favorite hobby of the moment is traditional rug hooking. This is a sample of what I do.? It's called "November".? I dyed most of the wool myself. It is made from wool flannel, cut into strips a little less than 1/4" and then worked into a linen backing. This is my 3rd rug.
