Chicken Shwarma Salad! W/Maple Syrup, Old Cheddar and Blueberrie

  • Shawarma Spice Blend: In a bowl combine cinnamon, salt, pepper, cloves, nutmeg and cardamom.
  • n a shallow glass dish, combine chicken breasts with 1/2 cup of the sweet onion vinaigrette. Marinate in the fridge for 1 to 4 hours.
  • Remove chicken from marinade and discard marinade. Sprinkle chicken with Shawarma spice blend to coat lightly. Grill or broil chicken for 4 to 6 minutes per side or until chicken is no longer pink in centre. Set aside to cool; cut in diagonal strips.
  • In a non-stick skillet over medium heat, cook apple rings in 1/4c maple syrup until softened and slightly caramelized. Remove to a rack and cool.
  • Toss pecans with remaining 1/4 cup maple syrup and place on a baking sheet. Bake in a preheated 350 F oven, stirring often, for 12 to 15 minutes or until toasted and glazed. Cool.
  • Divide spinach among 4 plates. Top with onion rings, shredded cheese, pecans, blueberries, apple rings and sliced chicken. Drizzle salads with remaining 1/2 cup sweet onion vinaigrette.

  1. This recipe makes for a very nice tasting, definitely unusual salad, & one that I'm happy to put together again sometime next year when blueberries are plentiful! Although I did leave out the fresh berries this time, true to the season I added a similar measure of dried cranberries, & we thought that worked out quite well! Thanks for sharing the recipe!   2. Great main meal salad. I wasn't sure how it would come together, such a unique blend of ingredients. however, it turned out wonderful, sweet and savory and crunchy and soft. a wonderful blend of textures and flavors. I did make it with romaine instead of spinach, since my family prefers it and I had it on hand. Love love love the crunchy pecan syrup thing, that was a wonderful touch. I absolutely loved the flavor of the chicken, I will be sure to use that blend of seasonings and marinade in other dishes as well. thanks for a unique and delish recipe!
     
  3. This has a very interesting mix of flavors. I really didn't know what to expect but found it rather good. The maple and onion come together distinctly but harmoniously. I think next time I'll skip the blueberries it was a little more sweetness that just wasn't needed.
     
  4. This was a great dinner salad which we enjoyed! I skipped the pecans and also half the maple syrup. I used a fat-free onion dressing instead of the vinaigrette that was mentioned in the ingredients. Delish! Thanks for sharing!
     
  5. This is my to-die-for-perfect-dinner salad! I admit, rather than cook the apple in the maple syrup separate from the pecans, after turning the apple slices over while cooking in the maple syrup, I added the remaining syrup and added the pecans to glaze! I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
