Directions

  1. Heat oil in large saucepan over med-high heat until hot.
  2. Add pepper, onion, zucchini and garlic. Cook and stir 3 minutes.
  3. Add all remaining ingredients EXCEPT Noodles and parmesan.
  4. Bring to a boil.
  5. Add noodles and cook for 12-15 minutes stirring occasionally.
  6. Sprinkle Servings with Parmesan Cheese.
