  • 4 boneless chicken breasts, cut into bite size chunks
  • 6 large potatoes, cut into bite size chunks
  • 1 lb baby carrots
  • 1 small onion, diced (optional)
  • 2 (8 ounce) cans cream of mushroom soup
  • 6 ounces sliced mushrooms (optional)

directions

  • Spray the crock pot with a little cooking spray.
  • Layer carrots, potatoes, onion, mushrooms in crock pot.
  • Season each layer with a little salt and pepper.
  • Arrange the chicken on top of the veggies.
  • Cover the chicken with the soup and spread evenly.
  • Cook on high for about 3 hours.
  • Stir and cook on low for another hour until chicken and potatoes are cooked through.
