  • Cut breasts in 1/2 crosswise,then in strips lenghtwise.
  • Mix salt, pepper, oregano,and flour in shallow dish.
  • Add chicken pieces, stir to cover.
  • Heat butter and oil in lg skillet.
  • Add strips, cook and stir until browned.
  • Add tomatoes and garlic, cook and stir 3 minutes.
  • Add basil and lime juice.
  • Blend well.

  1. I just made this tonight. I didn't taste much of the butter or the garlic. I could definitely taste the lime & tomatoes though. I also had to cook the chicken in two batches as my large skillet just wasn't big enough. So that slowed things down. Sorry but it just wasn't a keeper for me.
     
  2. A pretty good recipe overall, but I wish it would have stated that you serve it over pasta or something. It's more of a saucy dish than I expected (I used canned diced tomatoes) Also, I thought the lime was a little overpowering, so I'd tone it down to 1 tablespoon instead of two.
     
  3. I used chicken tenderloins so they were perfect size for this meal. It was so yummy but took a long time to make enough for my whole family...but the taste was definatly worth it!

  5. I didn't have any lime juice, so I left it out. Other than that, though, I followed the recipe. It was delicious and super easy! I'll definitely be making this recipe in the near future.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
