Chicken & Sweetcorn Bolognese

"Sweetcorn, chicken and spicy sauce make a great combination. This simple bolognese is ready to serve in the time it takes the pasta cook. Why not add 2 - 3 slices of chopped smoked bacon in with the chicken for extra flavour. Or add some chili flakes or chopped fresh chili pepper to make it spicy."

  • 14 ounces fusilli (or other pasta shapes)
  • 1 lb ground chicken
  • 1 large carrot, coarsely grated
  • 1 (10 ounce) can sweetcorn, drained
  • 1 lb tomato-based pasta sauce

  • Cook the pasta in a large pan of boiling water, according to the packet instructions then drain well.
  • Meanwhile, lightly brown the chicken in a large non-stick pan for about 5 mins until the juices run clear.
  • Stir in the carrot, sweetcorn and the sauce and bring to a gentle boil. Simmer gently for 5 minutes.
  • Add the sauce to the pasta, toss well together then divide between bowls and serve.
