  • Cook pasta according to package directions.
  • Meanwhlie, in a large skillet heat the chicken with the garlic in oive oil for 4-5 minutes or until heated through.
  • Stir in the half-and-half, taco seasoning and butter.
  • Cook until just heated. Season to taste with salt and pepper (none may be required cuz of the taco seasoning.) Add drained, cooked pasta and toss.
  • Serve with grated parmesan cheese.

  1. I just made this for my husband and I. I didn't have any chicken that was already cooked, so I cut up some chicken breasts and sauted them in the olive oil and garlic and added some cumin. I used penne pasta. I added two cups of Half & Half to the chicken, the butter, 6 teaspoons of Taco Seasoning. It seemed kind of runny, so I added two teaspoons of corn starch to help thicken it. Just before it was done, I added about a cup of parmesan to the Half & Half and chicken to add even more thickness to the sauce. Put the penne in a large bowl, then poured the creamy, cheesy chicken mixture over the penne and stirred it up. My husband really liked it a lot and ate three servings of it. I liked it, too, but only had two servings. We had a bunch left over, so we'll add a little Half & Half to the bowl we heat it up in the microwave, stir it and heat it. The next time my son comes home to visit, I'll make it for him because he'll love it.
