- 7 3⁄4 cups chicken broth
- 1 (14 1/2 ounce) can can stewed tomatoes, cut up
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1⁄4 cup grated parmesan cheese
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 (9 ounce) package refrigerated cheese tortellini
- 2 1⁄2 cups cubed cooked chicken
directions
- In a large pot combine the broth, tomatoes, spinach, parmesan cheese, and salt and pepper, cook for 10 minutes.
- Add the tortellini and chicken, cook for 5 minutes or until tortellini is heated through.

I am not one who cooks 3 meals a day because to me, cooking is supposed to be an enjoyable pursuit and I do not cook out of obligation. However, when I'm in the mood, I do like to try out new recipes.
