  1. *Bake chicken @ 350 until juices run clear. Shred, cool, set aside.
  2. *Spray pan with cooking spray. Sauté tortillas until browned, set aside.
  3. *In large pot (medium heat) sauté garlic, onion, & jalapeño until onions are clear.
  4. Add roasted Anaheim peppers & 1/8 tsp chili powder. Until fragrant. (1 min.).
  5. *add stock, chicken, corn, cilantro, and lime juice. Simmer 5-10 minutes, or until heated threw.
  6. Pour soup in bowls, top with toasted tortillas and cheese.
  7. Still tastes great w/o Anaheim chilies.
  8. really tasty with chopped avocados on top too!
