ingredients
- 2⁄3 cup mayonnaise
- 2 tablespoons lemon juice
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground pepper
- 2 cups diced cooked chicken
- 2 red apples, cored &, diced
- 2⁄3 cup sliced celery
- 1⁄2 cup chopped walnuts
- 1⁄2 cup sliced seedless grapes
directions
- In a bowl, combine the mayonnaise, lemon juice, salt and pepper.
- Add the chicken, apples, grapes and celery.
- Toss to coat.
- Cover and chill.
- Sprinkle with walnuts just before serving.

Wonderful chicken Salad recipe, Merlot! I love chicken salad. Whenever we go out to lunch, I always look for chicken salad, so I have had a lot of different kinds. The dressing on this is excellent. The walnuts added a great texture. I added only one apple and found for my salad it was plenty, plus I used freshly ground black pepper. For my money, this recipe is definitly worthy of 5 stars!

Wow! This is one great salad! I can't stop eating it lol! I used 2 apples...raisins...dried cranberries...celery and walnuts. I used precooked chicken strips from Costco...made this easy peasy! I will try pecans and add grapes next time! this was super good! Oh! and I added just a hint of nutmeg...delish! Thanks so much for posting this!

I doubled this recipe to use for a baby shower luncheon. I served the chicken salad on butter croissants and received rave reviews! I mixed the chopped walnuts in with the salad instead of sprinkling on top, and the texture turned out very well. This is a wonderful chicken salad recipe, and I'll definitely be making it again!

we forgot the nuts, but still enjoyed this very much! thank you! UPDATE = I have made this several times now and it never disappoints! As a personal taste, I add red seedless grapes (which add great color!) and some crumbled bacon pieces usually found in the salad toppings section. My husband and I don't care for the nuts, so we omit them and it's fine! What I like about this recipe is that I almost always have the ingredients on hand!

Merlot, I made this the same time as your Crunchy Chicken Casserole, but made it with diced cooked turkey instead of the chicken, it is in the fridge for tonights dinner, but I must say that I don't believe that I will even have enough for dinner, as Dh and my son have already been in to it...it is so good.!..a very tasty way to use up leftover chicken or turkey, the apples give it a nice kick...I used half low-fat sour cream and half mayo to make this....delicious, we will be having it tonight with a salad and rolls...Thanks so much for posting another winner sweets!...KC :-)

Hubby and I were fortunate enough to be able to retire early and now enjoy traveling in our motorhome :) . Our travels have taken us all over this great country of ours and meeting new and exciting people along the way is an extra bonus. We are blessed. We usually alternate between Florida Keys and Arizona for the winters. The rest of the year, you can find us just about any place. We love our home on the lake, but there is a bit of gypsy in us both and we hit the road as much as we possibly can.
I subscribe to Taste of Home and own EVERY Southern Living Annual since 1979.
I guess my biggest pet peeve is people who are negative all the time. Because I enjoy life so much, I try to avoid such people. Life is too short.
