  • In a pot, add beans, salsa, corn, water, chicken, spices and onion.
  • let simmer for one hour.
  • Turn off the burner.
  • add cheese, and allow to sit for 10 minutes.
  • Stir to ensure that the cheese has melted.

  1. We almost always enjoy chicken in chili, & this dish was no different in that respect ~ The taste was great & we thoroughly enjoyed it! We much prefer the monterey jack over any processed cheese! I did serve a small portion of it with a larger salad for a great lunch, & the rest has been frozen for another time!
